Crunchy Peanut Stuffed Bell Peppers
This is the perfect single-serve appetizer and a wonderful meal-prep recipe.

- 5-6 Bell Peppers
- 1/2 lb Ground Chicken
- 250 ml Chicken Broth
- 2 Diced Onion
- 1-2 tbsp Crunchy Peanut PODI
- 1 cup Mozzarella Cheese
✦ Instructions
- De-seed colored bell peppers, cut tops off and cook in the oven for 350F, for 20 mins to soften
- While bell peppers are baking, let's make the filling with diced onion, ground chicken and chicken broth.
- Sautee diced onion, ground chicken until caramelized and browned (10-15mins). Add chicken broth, and mix in uncooked rice.
- Cook until rice is well-cooked and fluffy (20-30 mins). Season with Crunchy Peanut PODI.
- Top each bell pepper with seasoned stuffing, top with mozzarella cheese. Cook for another 15 mins. Broil for 3 mins for molten cheese.
You can easily substitute ground chicken with tempeh or shredded tofu, and replace chicken broth with vegetable broth.
