Crispy Kaatu Yaanam Red Rice Summer Salad

Another Thai-inspired dish, the Crunchy Peanut PODI- flavored crispy rice adds such a lovely crunch to this summer salad that is full of refreshing cucumber, avocado, mint, cilantro and a dressing of ginger, lime, avocado oil and fish sauce! Came together in no time and was highly satisfying! Henceforth, I will be adding crispy rice to more of my salads.
✦ Ingredients
- 2 cucumbers (sliced thinly)
- 1 bunch of mint (chopped)
- 1 bunch of cilantro (chopped)
- 1 inch piece of ginger (grated)
- 1 tbsp avocado oil
- 1 tsp fish sauce
- 1 tbsp lime juice
- 1 cup cooked Kaatu Yaanam rice
- 1 tbsp ghee
- 1 tbsp Crunchy Peanut PODI
- 1 avocado (diced)
✦ Instructions
- Mix ginger, fish sauce, oil, and lime juice and salt to taste to make a dressing
- Mix cooked rice with ghee and PODI and clump it into clusters. Air fry at 425F for 8 mins for a flavorful crispy rice salad topper!
- Mix sliced cucumber, avocado, chopped herbs (cilantro and mint) with the dressing and crispy rice! Serve and eat fresh!













Feel free to add tangerine chunks or grapefruit chunks to this salad. Chickpeas or edamame also play nicely with this flavor combination for additional protein and fiber. Fried tofu will pair perfectly with it too!
