Plum & Tomato Peak Summer Salad

This salad is as refreshing as it gets. The dressing is light and zesty. When the fruit and vegetable juices mix into the dressing, it gets even better. The plums here are wild plums plucked from a neighbor's tree - they are the perfect balance of tart and jammy sweet. They were too ripe to cut, but I would recommend cutting your store bought plums into juicy chunks. Plums are my stone fruit choice of the year, and I know I will be making this on repeat. 


✦ Ingredients

  • 1-2 thin-skinned cucumber
  • 6 plums
  • 2 large heirloom tomatoes
  • 1.5 cups shredded carrot
  • Zesty Coriander PODI
  • Honey
  • Olive oil
  • Lemon or Orange Juice

✦ Instructions

  1. Make your dressing with Zesty Coriander, olive oil, lemon juice or Orange juice (I prefer the orange) and honey.
  2. Mix shredded carrot with thinly diced cucumber, chunky heirloom tomatoes and plums
  3. Mix in the dressing and toss the salad
  4. Serve fresh or store in the fridge! It stores well compared to more salads.
