Carrot Bean Poriyal Rice (South Indian stir fry)

So many times we go to our South Indian friends homes to casually find a couple of curries, rice, sambar and rasam. A poriyal - a South Indian vegetable stir fry - will always feature in the spread. This dish is great as a main dish - hearty, flavorful, chock full of veggies. Often the stir fry and the rice are served separately, but I like serving them together for the perfect balance of flavor to rice, especially for my friends that are not too familiar with the ideal curry to rice ratio!
✦ Ingredients
- 2-3 carrots (diced, approx 200g)
- handful of beans (diced, approx 250g)
- 1-2 tsp mustard seeds
- 1 tbsp coconut oil
- 4 tbsp Spicy Coconut PODI
- 150g cooked brown rice
✦ Instructions
- Heat coconut oil, add mustard seeds and curry leaves when hot. Add diced veggies to the oil
- Cook thoroughly until tender to bite
- Add 3 tbsp Spicy Coconut (you can always add more at any point if needed)
- Add cooked brown rice and mix thoroughly. Top with 1/2 tbsp for an extra nutty taste.
- Plate and serve!
