Crispy Garlic Turkish Eggs

Perfect if you are entertaining guests or just having a brunch at home with loved ones. This dish comes together in a jiffy and is certainly a celebration of juicy heirloom tomatoes and sunny side-up eggs. Layered over a thick creamy bed of greek yogurt or skyr, and drizzled with a generous Crispy Garlic-flavored olive oil, this dish is perfect to scoop up with a good baguette! Always a hit with all my guests :)
β¦ Ingredients
- 1 large tub of Greek Yogurt or Skyr
- 4-6 Eggs
- 1 Heirloom Tomato
- Olive oil
- Salt, to taste
- Parsley, for garnish
- Baguette or Sourdough bread
- Crispy Garlic PODI
β¦ Instructions
- Take a large plate and spread out your skyr or greek yogurt into a swooshy bed
- Cook eggs for 5-10 mins until the whites cook, ensure yellows are still soft and dippable. You can cook 4-6 eggs in a large skillet with a bit of oil for the perfect multi-egg sunny side up omelette
- Layer the omelette on the yogurt base. In the same pan, sear the tomatoes
- Layer tomatoes on the yogurt and egg base. In the same pan, take 3 tablespoons of olive oil, heat it up. Turn off the pan, add 1/2 tbsp Crispy Garlic PODI
- Pour the PODI infused oil and serve with a baguette or sourdough! Garnish with flaky salt and parsley
