Creamy Hearty Sambar Spinach Chickpeas

I have become obsessed with crispy, crunchy chickpeas tossed in hearty sambar PODI and tamarind - it is such a classic combo that perfect on chickpeas, potatoes, veggies! Make it scoopable appetizer absolutely makes this a gathering-friendly dish and a complete star! 

(inspired by a Bon Appetit recipe and my mom's hearty sambar chickpeas)


✦ Ingredients

  • 1 tsp Coconut Oil
  • 2 tsp Hearty Sambar
  • 1 small Onion
  • 1 tbsp All Purpose Flour
  • 2 tbsp tamarind slurry
  • 200g Chickpeas (canned and drained)
  • 1 bunch spinach
  • 100 ml coconut milk
  • Cilantro and lime, for garnish

✦ Instructions

  1. Sautee 1 tsp coconut oil, add diced onion, coconut milk, and the 1tbsp all purpose flour.
  2. Wash and chop spinach. Add to the above coconut milk slurry.
  3. Drain canned chickpeas, toss in 2 tbsp coconut oil and 2-3 tsp hearty sambar, and tamarind slurry (make tamarind slurry by extracting tamarind pulp from pod in hot water, or mixing 1/2 tbsp tamarind paste with 1-2 tbsp hot water)
  4. Air-fry or bake seasoned chickpeas on a sheet pan in a stovetop, for 180 C for 25 mins or until chickpeas are crispy!
  5. Take an oval plate, place the creamy coconut-spinach, then layer with chickpeas and garnish with cilantro and lime!
