Sahar's Summer Burrata Salad with Crunchy Peanut PODI
Chef Sahar, the executive chef at Chai Pani Atlanta, is a dear friend who champions local produce and seasonality on her menu. She generously shared this recipe with us. In true Sahar fashion, she somehow took all the delicious things I associate with summer - peaches, corn, tomatoes - and created this recipe that is INCREDIBLY delightful! I was shocked by how well it all comes together. Crunchy Peanut subtly adds so much to this recipe and I loved making it as much as eating it! Hope you get to try it too :)

✦ Ingredients
- 3 Ears of corn, steamed or roasted on the cob, then shaved
- 2 ripe peaches, cut into 1 - 1.5 inch pieces
- 1.5 cup of cherry tomatoes, cut in 1/2 or 1/4 if large
- 6 basil leaves, torn into small pieces
- 6 mint leaves, torn into small pieces
- 1 (16oz) container of burrata
- 1T crunchy peanut podi
- Salt / black pepper to taste (I like a lot of pepper)
- For the dressing: Mix all ingredients in a jar with an good lid and shake vigorously!
- 1 lemon, zested and juiced
- 2T Sherry Vinegar
- 1/4C good olive oil
- 3T Crunchy Peanut Podi
- Salt and fresh black pepper to taste
✦ Instructions
- Mix corn, cut peaches, cut tomatoes, basil, and mint in a bowl.
- Season with salt / pepper, add dressing and mix well.
- Plate dressed veggies and fruit. Top with burrata broken into 2 inch pieces. Sprinkle with more podi on top of the cheese and drizzle with a little bit of good olive oil.
