South Indian-ish Devilled Eggs

The creaminess of the egg yolks is balanced off with tangy tamarind and spicy Hearty Sambar. The egg yolk mixture is elevated in texture with some mayo and greek yogurt - making this the only devilled eggs I will ever eat! :)
✦ Ingredients
- 6 Hard Boiled Eggs halved (cooked for 14 mins)
- 1-2 tsp tamarind slurry (tamarind pod pulp extracted in hot water or 1tsp tamarind paste mixed in 1 tbsp hot water)
- 2 tsp mayonnaise
- 2 tbsp greek yogurt
- salt to taste
- Hearty Sambar
- Crispy Garlic
✦ Instructions
- Boil eggs until they are hard, for 14 mins, half them, scoop out the yolks
- Mix yolks with 1 tsp tamarind slurry, 1 tsp Hearty Sambar, 2 tsp mayonnaise, 2 tbsp Greek Yogurt, salt to taste
- The stuffing should taste creamy and tangy, adjust as needed with ingredients
- Pipe the flavored egg yolk mixture into the egg white halves
- Garnish with cilantro and Crispy Garlic!
