Creamy One Pot Chicken Curry with Beans & Tomatoes

Some days we don't want to deal with dishes, this is perfect for that. Comes together in a jiffy and all I ever need for flavor are some PODIs and aromatics - ginger and garlic in this case! 


✦ Ingredients

  • 1lb chicken (thigh or breast)
  • 1/2 tbsp grated ginger
  • 1/2 tbsp crushed garlic
  • 1/2 tbsp Hearty Sambar PODI
  • 1 tsp Crispy Garlic PODI
  • 1 tbsp Curry Leaf PODI
  • 1 tbsp Olive oil/Coconut oil
  • 10-15 cherry tomatoes
  • 1 cup diced beans
  • 200 ml coconut milk
  • Cooked rice to serve

✦ Instructions

  1. Marinade chopped chicken in ginger, garlic, salt, Hearty Sambar, Crispy Garlic and Curry Leaf PODIs
  2. Stir fry marinated chicken in Olive oil/Coconut Oil
  3. Once browned, flip pieces, brown both sides. Once cooked, move the chicken to the side of the pan, add cherry tomatoes, let them cook, then add green beans and coconut milk.
  4. Let it come to a simmer on low-medium with a lid on the pan. Cook until beans are soft but have a bite (10-15 mins).
  5. Garnish with lemon and diced coriander, serve with rice!
  6. Substitutions: Replace Chicken with anything chonky - like tofu, tempeh, cauliflower even :)
