Savory South Indian French Toast
Thrilled to share a childhood classic with you! I remember this as one of my favorite breakfasts growing up. It was the perfect mix of spicy and sweet. It was also the dish I mastered first as a teenager :)
β¦ Ingredients
- 4β6 thick slices brioche or white sandwich bread (2β3 cm thick, preferably day-old)
- 2β3 eggs
- ΒΌ cup milk (regular or coconut milk)
- 2β3 tbsp Crispy Garlic PODI
- 1 tsp grated jaggery or raw brown sugar (or to taste)
- Pinch of salt
- Butter, ghee, or neutral oil for cooking
- Flaky sea salt (optional)
- Honey (optional, for sweet finish)
β¦ Instructions
- Crack the eggs into a wide, shallow bowl and beat well. Add the milk and whisk to combine. Stir in the Crispy Garlic PODI, jaggery or sugar, and a pinch of salt, mixing until the PODI is evenly distributed through the batter.
- Heat a pan over medium heat and add butter, ghee, or oil. Dip each slice of bread into the batter, soaking for about 20β30 seconds per side until well saturated but not falling apart.
- Place the soaked bread onto the pan and cook on medium heat for 2β3 minutes per side until deeply golden and cooked through. Avoid high heat so the inside sets properly without burning the outside.
- Serve hot straight from the pan. For a savory finish, leave as is or add a light pinch of flaky salt. For a slightly sweet version, drizzle a small amount of honey or sprinkle a little jaggery over the top just before serving.
Substitute honey with maple syrup!
